Can this project be used for 3d scanning objects using an XBox Kinect?

Yes. However I think the XBox Kinect 360 driver doesn't work anymore since Windows 10, but on ubuntu it should still work (libfreenect). For Xbox One, it's been a while since I tested on Windows, but pretty sure it is still also working on ubuntu (libfreenect2). You may check if your camera works with minimal example of one of these libraries first.
